Braised chicken with orange and black bean sauce

    A delicious blend of fresh orange, garlic, ginger, soy and black bean sauce, makes for a fabulous chicken dish. Serve with rice or noodles and stir fried vegetables.

    Ingredients
    Serves: 4 

    • 1 tablespoon vegetable oil
    • 2 cloves garlic, finely chopped
    • 2.5cm piece of root ginger, peeled and finely chopped
    • 450g boneless, skinless chicken thighs, each cut into 4 to 5 pieces
    • 1 sachet Blue Dragon black bean stir fry sauce
    • 1 orange, juiced, and 1/2 of the zest cut into long thin strips
    • 1 tablespoon soy sauce

    Method

    1. Heat the oil in a wok over medium to high heat. Add the garlic and ginger, and stir fry for about 10 seconds. Add the chicken, and fry until lightly browned.
    2. Add the black bean sauce, orange juice and zest, and soy sauce. Cover and simmer for 25 minutes, stirring occasionally. If drying out add a little water.
