    About this recipe: A refreshing and versatile black bean and corn salsa perfect as a vegan dip, starter or salad. Enjoy wrapped in a tortilla or as a dip with some crunchy tortilla chips.

    Ingredients
    Serves: 6 

    • 1 small tin sweetcorn, drained
    • 1 tin black beans, rinsed and drained
    • 1 red pepper, pith removed, diced
    • 2 spring onions, sliced
    • 1 teaspoon dried coriander
    • 1/2 lime, juiced, to taste
    • salt and pepper to taste

    1. Combine all ingredients in a medium bowl and mix well. Taste and add more lime juice, salt and pepper to your liking. Serve immediately or let marinate and chill in the fridge for while before serving.
