Jackie's chocolate chip cookies

    Quick and easy, these classic chocolate chip cookies are sure to become a baking staple in your kitchen.

    Makes: 1 dozen cookies

    • 115g butter
    • 45g caster sugar
    • 100g dark brown sugar
    • 1 egg
    • 1/2 teaspoon vanilla essence
    • 175g plain flour
    • 1/2 teaspoon bicarbonate soda
    • 1/4 teaspoon salt
    • 175g chocolate chips

    1. Pre-heat oven to 180 C / Gas 4. Lightly grease 2 large baking trays.
    2. With an electric mixer, cream the butter and both the sugars together until light and fluffy.
    3. In another bowl, mix the egg and vanilla, then gradually beat into the butter mix. Sift over the flour, bicarbonate of soda and salt and stir. Add the chocolate chips and mix well.
    4. Place heaped teaspoons of the dough 2" apart on to the baking trays.
    5. Bake the oven until lightly coloured, about 10-15 minutes. Transfer to a rack to cool.

    A soft mixture but I used a heaped dessert spoon and got 12 large cookies. Delicious.  -  21 Mar 2016


    fantastic, kids, grandkids and biggest kid of all (husband) loved these. had to make more almost straight away! I can't have chocolate so made half with choc chips and half with raisins. those disappeared just as quickly.  -  13 Oct 2015
