Vegetable burger, Joe's style

    I'm more of a carnivore but not everyone is. I had to quickly try and make a veggie burger for someone who I didn't know was vegetarian. Easy peasy veggie burger, using what was in my fridge.

    Serves: 4 

    • drizzle of olive oil
    • 1 onion, diced
    • 1 garlic clove, chopped
    • 300g carrots, grated
    • 300g courgettes, grated
    • 1 leek, chopped
    • 1 (400g) tin of chickpeas, rinsed and mashed
    • 1 teaspoon dried coriander
    • 1 teaspoon ground cumin
    • 2 tablespoons peanut butter or natural yoghurt
    • 90g breadcrumbs
    • 1 egg, beaten
    • salt and black pepper to taste

    1. Cook the onion and garlic in a bit of oil for 5 minutes. Add the carrot, courgette and leek and fry for 10 minutes, stirring occasionally.
    2. Add the rinsed mashed chickpeas and stir. Stir in the coriander, cumin, peanut butter or yoghurt, and simmer for 2 minutes.
    3. Add the breadcrumbs and the beaten egg. Season with salt and pepper and mix well.
    4. Divide into 4 portions and shape in the palm of your hand into burgers. Place on plate, cover with cling film and place in the fridge for 15 to 20 minutes.
    5. Spray a pan with Fry light or add oil, place burgers in for about 4 minutes each side.
    6. Place in a bun to serve.


    'appy daze - I like spice so I add chilli flakes into the mixture. I serve mine with sweet potato wedges and my homemade tomato sauce.
