Fruity mango sorbet

    This attractive, refreshing summer treat is perfect for cooling down in the summer heat. A healthy dairy free alternative to ice cream means that you can stay guilt free when you return for a second bowl.

    Serves: 4 

    • zest of 1 unwaxed lime
    • 500ml water
    • 300g icing sugar
    • 20ml light rum
    • 3 mangoes, peeled and stoned

    1. In a saucepan, combine the lime zest, water and the icing sugar. Bring to the boil and simmer for 5 minutes. Chill in the fridge until cold.
    2. Strain the lime water to remove the zest then add the rum.
    3. In a blender or a food processor, purée the mango until smooth and add to the sugar water. Mix well.
    4. Pour the mango mixture into an ice cream maker and follow the manufacturer's instructions to make sorbet.


    To remove the wax coating commonly found on fruit, rinse thoroughly and scrub gently under warm water and then wipe with a clean towel.
