    About this recipe: A tangy salad dressing made with anchovies, garlic, mustard, red wine vinegar and olive oil. Traditionally, this is used to dress a Nicoise salad which is made up of tuna, hard-boiled eggs and black olives. But it's equally delicious when simply served over salad leaves or new potatoes.

    Ingredients
    Serves: 4 

    • 30g anchovy fillets
    • 1 garlic clove, peeled and crushed
    • 1 teaspoon Dijon mustard
    • 1 tablespoon red wine vinegar or fresh lemon juice
    • 75ml or 5 tablespoons olive oil
    • Salt and freshly ground black pepper

    1. Place the anchovies, garlic, mustard, red wine vinegar or lemon juice and olive oil into a blender or food processor and blend until smooth and creamy. Season to taste with salt and pepper.

    Tip:

    This dressing can be made the day before and stored in a jar in the fridge. Shake before using.
