Radish and ham spread

    A versatile and well textured radish and ham spread is a great little starter to a main meal, or ideal as a sandwich filler for the lunchbox.

    Serves: 4 

    • 1/2 small white radish, peeled and coarsely grated
    • 2 teaspoons salt
    • 3 tablespoons oil
    • vinegar
    • 3 tablespoons cream cheese with garlic and herb
    • salt and pepper to taste
    • 3 cornichons, finely chopped
    • 1 small red apple, finely chopped
    • 50g cooked ham, chopped
    • 1/2 bunch fresh parsley, chopped
    • 4 slices bread
    • 30g soft butter

    1. In a bowl, combine the grated radish with 2 teaspoons salt and leave for 15 minutes to draw out the water.
    2. Drain the radish and squeeze out any excess water. Transfer the radish to a clean bowl and combine with oil, vinegar, cream cheese, cornichons, apple, ham and parsley. Season with salt and pepper to taste.
    3. Spread the butter evenly over the slices of bread and top with the radish mixture. Garnish with parsley.


    The white radish is an elongated root and not red and round like a typical radish. It may not be available in your local supermarket so search online or in speciality shops. In a pinch, substitute with red radish.
