About this recipe: Prosciutto and pesto combine for this lovely variation on a simple scrambled egg. Great for a Sunday brunch or special breakfast.


Serves: 4 

  • 50g butter
  • 4 slices prosciutto, diced
  • 6 eggs
  • 1 dash single cream
  • 50g grated cheese
  • 2 tablespoons pesto
  • salt and pepper, to taste

  1. Melt the butter in a frying pan over a low heat and fry the prosciutto until lightly browned.
  2. In a bowl, whisk together the eggs and cream and add to the ham. Cook and stir the eggs over low heat for about 10 minutes.
  3. Sprinkle in the grated cheese and cook for another 2 to 3 minutes until melted. Just before serving, mix in the pesto and season with salt and pepper to taste. Serve immediately.
