Winter spiced bread and butter pudding

    A warming seasonal comfort pudding that uses up some Christmas leftovers. I used brandy cream in this recipe, but you can use plain.

    Serves: 6 

    • 3 eggs
    • 3 tablespoons caster sugar
    • 300ml cream (or Brandy cream)
    • 275ml milk
    • 1/2 teaspoon vanilla extract
    • 55g butter
    • 1 loaf white bread, sliced (stale works best)
    • mincemeat

    1. Pre-heat oven to 180 C / Gas 4.
    2. Mix eggs, sugar, cream, milk and vanilla extract in a large bowl.
    3. Butter each slice of bread and spread with the mincemeat.
    4. Lie the bread in an ovenproof dish, overlapping the slices slightly. Pour the egg mixture all over the bread and leave to soak in for 20 minutes.
    5. Bake in the pre-heated oven for 30 minutes, or till set.


    Serve warm with cream or custard.
