Lemon iced sponge cakes

    Quick and easy sponge cakes with lemon icing. You could also add the zest of one lemon to the sponge mixture for extra lemon flavour.

    Serves: 8 

    • 120g butter, softened
    • 120g caster sugar
    • 2 eggs
    • 120g plain flour
    • 1 teaspoon baking powder
    • 1/4 teaspoon bicarbonate soda
    • 1/2 lemon
    • icing sugar

    1. Preheat oven to 180 C / Gas 4.
    2. Cream the butter with a wooden spoon. Add the sugar and carry on beating till pale and creamy. Add in the eggs 1 at a time and carry on beating.
    3. Sift in the flour, baking powder and bicarb and fold it in (don't stir or overmix). Divide between cupcake cases.
    4. Place in the oven for 20-25 minutes or until golden and bounces back when pressed with your finger. Leave to cool on cooling rack.
    5. Once cool squeeze the lemon and mix the lemon juice with icing sugar (if the icing is not thick enough add more icing sugar). Spread the icing over your cooled cakes.
