Mexican beef

    A not too spicy Mexican beef dish which can be eaten with flour tortillas or rice. You can adjust the chilli as needed but, I make this for my kids so I don't want mine too spicy.

    Serves: 4 

    • 500g minced beef
    • 1 onion, chopped
    • 1 tin sweetcorn
    • 2 sachets creamed coconut
    • 1 small carton passata
    • 1 1/2 teaspoons mild chilli powder
    • 1 beef OXO® cube

    Prep:5min  ›  Cook:35min  ›  Ready in:40min 

    1. Brown the mince in a frying pan. Add the onion and chilli powder, and continue to cook till mince is browned and onion is tender.
    2. Add the passata and sweetcorn, and stir well. Crumble in the stock cube and add water just to cover. Simmer gently for 25 minutes.
    3. Add the creamed coconut and stir well. Simmer for a further 5 to 10 minutes, then serve.

    I made this recipe earlier today. It started out fine until i was advised to put coconut into it...what a totally changed the texture of the food for the worst i might say! It looked and tasted of baby food...horrid! This is most deffinately the worst thing i have ever ended up being thrown away. What a waste of money and time! What a terrible recipe. Well worth avoiding in my opinion. I've only given this one star rating...i wouldn't have given any stars but i had to to be able to send my review.  -  19 Feb 2014
