Spicy vegetarian prawns with linguine

    I discovered these amazing veggie prawns last year and decided to fuse them with my spicy linguine recipe. It's a little naughty but so good for a weekend treat or if you generally need a quick warm up.

    Serves: 4 

    • 1 tablespoon olive oil
    • 2 garlic cloves, chopped
    • 2 green or red finger chillies, chopped
    • 1 teaspoon chilli powder
    • 1/4 teaspoon black pepper
    • 1 bag Linda McCartney® frozen prawns
    • Elmlea® Single Cream Substitute, to taste
    • 125ml vegetable stock
    • 1 pack fresh or dried linguine

    1. Add the oil to a deep pan and gently saute the garlic and chillies. Add the chilli powder and black pepper and combine thoroughly.
    2. Add the vegetarian prawns. You can defrost them if you prefer or you could throw them in frozen like I do! Stir well with the spice mix.
    3. Add the stock and cook through until prawns are cooked, on a gentle heat.
    4. Prepare the linguine following packet instructions (for fresh pasta 4 minutes, for dried 6 to 12 minutes).
    5. Add required amount of cream to the prawn mixture on a low heat.
    6. Drain the pasta thoroughly and either add it to the pan of spicy prawn sauce or serve it in big bowls and ladle the mixture over it.

    Cook's note

    I sprinkle veggie Parmesan over it with chilli flakes - hope somebody tries it and enjoys it!

    It's very easy to prepare and overall a very satisfying dish and you can make it as spicy as you like. I've given it such a high rating purely because the linda maccartney prawns are supa-dupa delicious!!!!!  -  08 Feb 2013
