No added sugar wholemeal blueberry pancakes

    These healthy blueberry pancakes are the perfect Sunday breakfast. Wholemeal flour is better for you than white flour and leaves you feeling fuller for longer, whilst the sweetness of the blueberries means no added sugar - great for children! Omit or switch the blueberries if you wish. Can be topped with a plethora of extras to suit everyone's taste! Add any extra toppings - I eat mine with a chopped banana and maple syrup (natural sugars!).

    Serves: 4 

    • 125g wholemeal flour
    • 1 1/2 teaspoons baking powder
    • 1/8 teaspoon salt
    • 250ml buttermilk
    • 1 egg
    • 75g blueberries

    Prep:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Thoroughly mix the dry ingredients in a bowl.
    2. In a separate bowl, whisk the buttermilk and egg together.
    3. Add the wet ingredients into the dry ingredients and make sure they are totally mixed. Leave mixture for a few minutes (allowing the baking powder to work and giving fluffier pancakes).
    4. Heat a non-stick frying pan and cover with cooking spray.
    5. Add mixture to the pan and as bubbles start to rise through the mixture add blueberries onto the pancake, before flipping. When the edges are dry, flip and cook till golden on the reverse side.
    6. Serve and enjoy! :)


    If you don't have any buttermilk you can make your own by adding 2 teaspoons of lemon juice to 225ml of milk (I use semi-skimmed) and leaving it to stand for a few minutes.
    If you want to keep the pancakes warm whilst cooking all of the mixture you can put them on a plate in the oven on a low heat.

    First time ive tried wholewheat pancakes. Sorry but I found the mixture had too much milk and the pancakes too thin. Didnt like the texture or the taste. It may have had something to do with the fact that I didn't have buttermilk but I did make buttermilk like your recipe suggested. Will try these again with proper buttermilk and see how that works.. thanks  -  22 Jan 2014
