Easy sweet and sour chicken

    This is a very simple sweet and sour chicken recipe using ingredients you will probably already have in your cupboard.

    Serves: 2 

    • 1 teaspoon oil
    • 2 skinless chicken breast fillets, cut into chunks
    • 1 small onion, roughly chopped
    • 1 garlic clove, crushed
    • 1 red pepper, seeded and cut into strips
    • 1 small tin pineapples pieces in juice, drained
    • 5 tablespoons tomato ketchup
    • 1 tablespoon any type of vinegar
    • 2 tablespoons sugar
    • 1 handful salted, roasted cashews or peanuts (optional)

    1. Pan fry the chicken in the oil till cooked, about 5 to 6 minutes. Set aside.
    2. Wipe out pan with some kitchen towel and fry the onions, garlic and red pepper on a medium heat for 1 minute, then turn down the heat
    3. Stir in the pineapple, tomato ketchup, vinegar and sugar, and bring to the boil while stirring continuously. If the sauce is too thick add some of the pineapple juice.
    4. Stir in the nuts, if using, and serve with boiled rice or noodles.


    This recipe is very basic, you can use leftover meat or fish and sometimes I make a vegetarian version.

    Quick easy tasty, really enjoyed it, will def be doing again, did double up on the sauce, as not a great lot there, and personal preference we like more  -  20 Apr 2016
