Add the mince, onions and about two teaspoons of chilli powder and cook through until mince is partially browned, then add the garlic, peppers and mushrooms. Stir until evenly distributed.
Add the liquidised tomatoes, stir and let simmer until 3/4 of the liquid has been reduced; stir occasionally.
Add a handful of cheese and stir in, if desired. At this point, you can add more chilli and some salt and pepper as per your preference.
Simmer until liquid is fully reduced and the onions are soft. Serve with rice, pasta, tortillas or tortilla chips.
For a super healthy chilli dinner, replace the mince with diced or shredded turkey and leave out the cheese.
The addition of a tablespoon of Jerk BBQ sauce also goes well with this chilli - add when putting in the cheese. I never really stick massively to strict amounts and measurements - I prefer to throw in what I think would taste amazing until I am happy with it.
