Libby's sausage plait

    This a firm family favourite. It is also nice as a lunch box filler, if there is any left!

    Serves: 6 

    • 500g of sausage meat (or a normal packet of sausages with skins removed)
    • One medium onion finely chopped.
    • pinch of dried sage.
    • pinch of mixed herbs.
    • one packet of pre-made puff pastry
    • one egg, beaten.

    1. In a large bowl mix sausage meat, onions, mixed herbs and sage until combined. I find using my hands best, mucky but easier!
    2. Lay pastry out on to sheet of grease proof paper.
    3. Arrange sausage mixture in a vertical strip along middle of pastry. Try too get an even thickness so the plait cooks evenly.
    4. Taking a knife, cut approx 2cm thick diagonal cuts along the pastry either side of the sausage mixture.
    5. Then alternating the strips "plait" the pastry over. Trim off any excess pastry and discard.
    6. Using a pastry brush, wash over the egg.
    7. Place in a pretty heated oven on 200c until cooked through.


    I also cook mine on a wire rack with a baking tray underneath so any excess fat will drain away. Cooking time is approximate as my oven is older than god's dog and is tempremental!

    Add some chopped apple. 2 or 3 apples. Mix Apple's with rest of ingredients. Husband loved, especially when still hot out of oven. Definitely will do again  -  27 Dec 2016
