2 tablespoons extra virgin olive oil
110g (4 oz) sliced onions
2 cloves garlic, finely chopped
1 (400g) tin plum tomatoes, chopped
2 tablespoons chopped fresh oregano
1 teaspoon sugar
salt and freshly ground black pepper, to taste
5 large green peppers, cut into 2.5cm (1 in) strips

In a large frying pan, add oil, then onion and garlic and cook on gentle heat, 5 minutes or so, until golden.
Add tomatoes, herbs and seasonings, stir well to mix, and bring to boil. Reduce heat and simmer, stirring occasionally to break down the tomato mixture, for 20 minutes or so or until slightly thickened.
Meanwhile, in a separate pan filled with lightly salted water, bring the water to the boil, add the pepper strips and parboil for 5 minutes. Drain and combine with tomato mixture.
