Savoury green bean, bacon and potato salad

    Simplicity and Spanish flair combine for a potato salad to savour. Full of flavour thanks to the addition of bacon and a homemade vinaigrette.

    Serves: 6 

    • 1kg (2 lb) potatoes, boiled and cubed
    • 225g (8 oz) green beans, blanched and cut into 5cm (2 in) pieces
    • 1 red onion, very finely sliced
    • 175g (6 oz) streaky bacon, cooked and chopped
    • salt and freshly ground black pepper
    • Dressing
    • 2 tablespoons white wine vinegar
    • 1 1/2 tablespoons wholegrain mustard
    • salt and freshly ground black pepper
    • 4 tablespoons extra virgin olive oil

    1. Put the warm potatoes, green beans, onion and the crispy bacon bits in a large salad bowl. Combine well and season to taste.
    2. Prepare the dressing - mix the mustard and wine vinegar together, season and slowly drizzle in the oil, stirring continually, to emulsify. Taste and adjust seasoning.
    3. Pour the dressing over the potato mixture and serve warm.
