About this recipe: This healthier dessert in a glass is a mixture between a cheesecake, a fruit pot and can even be altered to make a great breakfast. It's rich, filling and full of flavour but surprisingly healthy. An added bonues, they're versatile and very easy to make-ahead

Serves: 2 

  • 6 gingernut biscuits
  • 2tbsp madeira (could also use marsala or similar alcohol)
  • 1 banana, cut into slices
  • 4tbsp peanut butter
  • 6 heaped tbsp fat-free yoghurt (try total 0% yoghurt)
  • 6 dates, chopped into pieces

  1. Put gingernuts in a bowl with the alcohol to soak up the liquid. Do not leave too long so that they maintain a bit of 'crunch'. Crush gingernuts and spoon into bottom of 2 glasses
  2. Spoon 2 heaped tbsp yoghurt into each glass (use more or less if you prefer) and spread loosely over biscuit layer. Top with banana
  3. In a microwave, heat the peanut butter for 30 seconds then spoon over banana layer, spreading loosely. Add 1tbsp dollop of yoghurt to each glass and top with dates


Make this dish extra yummy by adding some cocoa powder, melted dark chocolate or chopped nuts as a finishing touch. Or, turn this luxurious dessert into a good breakfast by swapping the booze-biscuits for crunchy cereal or granola.
