Simple salsa

    This simple and easy-to-make dish is very versatile; make it chunky for a perfect bruschetta topping, make it smoother to go with burger and chips or even use it as an omelette filling. It makes a flavoursome side dish or centre-piece and can be adjusted to suit your tastes and ingredients!! Go on, try it!

    Serves: 8 

    • Makes: 1 jar (approx)
    • 1 large onion (white)
    • 1-2 peppers (preferrably red or yellow)
    • 3 medium tomatoes
    • 50 gherkin
    • 50g olives (preferrably black)
    • 3tsp red chilli (try 'very lazy' jars of red chilli in vinegar, or use 2 whole chillis)
    • 1tbsp garlic paste (or 2 cloves)
    • 2tbsp chilli jam (or use chutney/cranberry sauce and add extra chilli flavours)
    • juice of 1/2 lemon

    1. Roughly chop any large ingredients and put everything in a blender
    2. Blend in short bursts, until the desired consistency is reached. Make sure you taste and add any extra flavours that you require


    REMEMBER: This ingredients list is not at all strict, if you're low on one ingredient, feel free to use up any leftover bits and bobs or some extra flavourings to suit your palette. Goes well in pasta sauce, curries, omelettes, with eggs, on bruschetta, on burgers and in salads!!
