Fruit and nut biscuit crunch

    This is a delicious recipe! The biscuit recipe is simple, and fairly healthy, and then you can add any flavours you want, raisins, dried apricots, any type of nut, even chocolate chips. Get creative!

    • 200g soft margarine
    • 100g demerara sugar (or other sugar)
    • 175g wholemeal flour
    • 175g self raising flour
    • 1 pinch salt
    • 125g of filling (eg 50g raisins, 50g pecans, 25g chocolate chips)

    1. Cream the margarine and sugar until soft and fluffy.
    2. Work in both flours, salt, and fillings. It should form a dough when squeezed together with clean hands. If it is too crumbly, sprinkle a very small amount of water into the mixture, and keep adding water until the dough is combined.
    3. Pat the dough into a greased, shallow, 30x20cm tin. Ensure the dough is level in the tin and evenly spread out. If you wish, mark a shallow pattern on the surface of the dough. Cut into 20 fingers.
    4. Bake in the oven at 180 C / Gas 4 for around 25 to 30 minutes.
    5. Once the biscuits are evenly cooked through and golden, remove from oven and leave to cool for a little, then re-cut the fingers and leave to cool completely on a wire cooling rack.


    If you like your biscuits a little sweeter, add an extra 25g of sugar into the mixture along with the other sugar, and sprinkle a little demerara onto the dough before you bake.
