Cream the margarine and sugar until soft and fluffy.
Work in both flours, salt, and fillings. It should form a dough when squeezed together with clean hands. If it is too crumbly, sprinkle a very small amount of water into the mixture, and keep adding water until the dough is combined.
Pat the dough into a greased, shallow, 30x20cm tin. Ensure the dough is level in the tin and evenly spread out. If you wish, mark a shallow pattern on the surface of the dough. Cut into 20 fingers.
Bake in the oven at 180 C / Gas 4 for around 25 to 30 minutes.
Once the biscuits are evenly cooked through and golden, remove from oven and leave to cool for a little, then re-cut the fingers and leave to cool completely on a wire cooling rack.
If you like your biscuits a little sweeter, add an extra 25g of sugar into the mixture along with the other sugar, and sprinkle a little demerara onto the dough before you bake.
