Dal fritters

    4 hours 35 min

I am on a low carb diet and needed a good substitute to potato. Loving my Indian food I thought I would try something with dal. This recipe was from me playing around in the kitchen, but it turns out that it is a very popular food during festivals in India.

    Makes: 10 fritters

    • 200g chana dal
    • 3 teaspoons dried mint
    • 1/2 teaspoon salt
    • 50g finely chopped cabbage
    • 1/2 red onion, chopped
    • 1 tablespoon chopped red chilli
    • 1 tablespoon olive oil
    • 1 medium sized egg
    • oil for frying

    1. Soak chana dal for 4 hours.
    2. Drain and wash dal and add to pan of boiling water. Cook until soft, about 10 minutes. Be careful not to overcook the dal, it should not be mushy.
    3. Drain the dal and blend to a grainy consistency similar to couscous.
    4. In a bowl mix dal, and all the other ingredients except the oil.
    5. If you have a burger press, this would be ideal, if not, place a large tablespoon's worth of mixture onto some cling film and press into a small patty.
    6. Heat a heavy bottomed frying pan with some oil and fry a few of the fritters at a time on a medium heat until golden. These will absorb the oil in the pan, but that is fine.

This is a great low carb substitute to potatoes. Experiment with the ingredients. I might add some more chilli to my next batch, but this recipe is very mild and only has a hint of chilli flavour. The mint and cabbage give a lovely fresh flavour. This roughly makes 10 fritters. I calculated the nutritional value and each fritter has 40 calories, 1.8g total fat, 1.4g carbohydrate, 356mg sodium and 18.6mg cholesterol.
