About this recipe:
A friend from Goa once told me about his grandmother making "curry sardines", possibly as a way to retain her Indian-Portuguese feeling while living in Mozambique. I decided to give it a go and it tastes great, is quite inexpensive and exotic enough - well, it sure is weird for the guys here in Portugal.
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, chopped
1 teaspoon grated fresh ginger
1 tablespoon garam masala
3 teaspoons curry powder
2 red chillies, seeded and chopped
175ml coconut milk
1 courgette, cut into half moons
1 teaspoon ground coriander
3 tins sardines in olive oil, drained

Stir-fry the onion, garlic, ginger and garam masala in the oil until tender.
Add the curry powder, chillies and coconut milk. Simmer for 4 minutes.
Add the courgette and coriander. Allow to simmer for 3 more minutes and remove from heat.
Add the sardines to the curry and stir gently. Wait for 2 minutes and take it back to very low heat for another minute.
Serve with white rice. Tip
Traditionally, garam masala was prepared at home; a friend's wife once taught me how and that's what I've been making ever since.
