Easter chocolate cupcakes

    These cute little Easter cupcakes take mere minutes to prepare. Pipe the icing on in the shape of a nest, nestling the chocolate eggs in the middle!

    Ingredients
    Makes: 18 cupcakes

    • Cupcakes
    • 115g (4 oz) Stork tub
    • 115g (4 oz) caster sugar
    • 2 large eggs
    • 115g (4 oz) self-raising flour
    • 1 tablespoon cocoa
    • 1/2 teaspoon baking powder
    • Icing
    • 85g (3 oz) Stork tub
    • 1 to 2 tablespoons milk
    • 1 heaped tablespoon cocoa
    • 225g (8 oz) icing sugar (less 1 tablespoon), sieved
    • 100g mini chocolate eggs, to decorate

    Method
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. To make cakes, place all the cupcake ingredients together in a mixing bowl and beat with a wooden spoon until combined (2 to 3 minutes).
    2. Place teaspoons of the mixture in 18 paper cases or 12 muffin cases.
    3. Bake on the second shelf from top of a preheated oven 190 C / 170 C Fan / Gas 5 for 15 to 20 minutes. Cool on a wire tray.
    4. To make chocolate icing, place all ingredients in a mixing bowl and beat until smooth. Either spread or pipe over the cakes in a nest effect and decorate with mini eggs.
