    About this recipe: I had used a marinade for Asian style fish regularly with rice, and got to the thinking the marinade would lend itself to prawns. Then one day I had no rice left so I used linguine and now I cook this every time with linguine!! It's a family fave now, a sweet, spicy, yummy dish and best of all it takes around half hour to prep, cook and serve. I snap my linguine in half before I cook, just makes it easier to eat. I serve with warm crusty bread and a nice glass of light fresh white wine, but that's optional!

    Ingredients
    Serves: 2 

    • 200g raw king prawns
    • 1 clove garlic, finely chopped
    • 1 medium red chilli, seeded and finely chopped
    • 1/2 handful finely chopped fresh coriander leaves
    • 3 tablespoons olive oil
    • 150g linguine pasta
    • 3 tablespoons rice or white wine vinegar
    • 1 tablespoon clear honey
    • 1 tablespoon soy sauce
    • 1 teaspoon grated lime zest
    • squeeze of lime juice
    • 5 spring onions, chopped roughly
    • To serve
    • 2 small wedges lime
    • chopped fresh coriander

    Method

    1. Combine garlic, chilli and coriander with 1 tablespoon of the olive oil. Mix well and toss with prawns. Leave to marinade while preparing the remaining ingredients.
    2. Place the linguine in a pan of boiling water and cook for around 8 minutes. Once the linguine is just cooked drain and place to one side.
    3. Whilst you waiting for the linguine, in a bowl combine the vinegar, honey, soy sauce, and lime zest and juice, and stir well.
    4. Now in a hot wok (or large deep frying pan), add the remaining olive oil. Once hot, add the prawns with the marinade and stir fry till the prawns go pink. Add the spring onions and stir fry for a minute more. Finally, add the vinegar-honey mixture and cook for about 3 minutes till the mixture is just bubbling. Add the linguine and toss well to combine.
    5. Finally serve in a bowl with a wedge of lime and a sprinkle with chopped coriander.

    Tip

    You could add a little less chilli depending on your taste. I hope you enjoy this quick dish as much as my family does.
