Creamy white wine mushrooms on toast

    So tasty. These mushrooms make a delicious starter, or skip the toast and serve them over a nice juicy steak.

    Serves: 2 

    • 20 button mushrooms, quartered
    • 2 tablespoons olive oil
    • 1 large red onion, chopped
    • 2 garlic cloves, chopped
    • 1 chicken stock cube
    • 1 small glass medium sweet white wine
    • 1 small tub cooking cream
    • 1 tablespoon creme fraiche
    • 2 slices baguette, toasted
    • 1 handful chopped fresh flat leaf parsley
    • freshly ground black pepper

    1. In a large frying pan, cook mushrooms in oil. When golden brown, add the onion and garlic and cook for a further 2 minutes.
    2. Add the stock cube along with the small glass of wine. Simmer for a further 5 minutes. Turn to a medium heat, add creme fraiche and cream. Bring to boil, then reduce heat back down to a simmer for 2 minutes.
    3. Place the toasted baguette on a serving plate. Top the slices with the creamy mushroom mixture, then sprinkle with parsley and black pepper to taste.
