Italian stuffed courgettes

    An easy and delicious vegetarian courgette recipe, which can be enjoyed as a side dish or a veggie main.

    Serves: 4 

    • 4 courgettes
    • 1 spoonful capers
    • 100g breadcrumbs
    • 50g grated Parmesan cheese
    • salt and pepper
    • extra virgin olive oil

    1. Warm up the oven at 200 C / Gas 6.
    2. Wash the courgette and cut in 3 parts. Take each side and cut in half on the longest side. With a knife, remove the inner white part of the courgette.
    3. Finely chop the capers.
    4. Combine the breadcrumbs, Parmesan, salt and pepper, and add a little olive oil and the capers and stir well.
    5. Place the cut courgettes in an ovenproof dish greased with a little olive oil. Sprinkle the courgettes with salt, then fill with the mixture and add a bit of extra olive oil.
    6. Bake in the oven for about 15 minutes till the courgettes become golden.
