Chocolate sandwich cupcakes

    A cupcake sized chocolate sandwich cake for everyone to enjoy. Use your favourite chocolate spread to sandwich the cupcakes.

    Serves: 12 

    • 150g plain flour
    • 2 tablespoons cocoa powder
    • 1 tablespoon baking powder
    • 175g butter
    • 175g golden caster sugar
    • 3 eggs
    • 1 teaspoon vanilla extract
    • 2 tablespoons milk
    • 140g chocolate spread

    1. Preheat oven 180 C / Gas 4.
    2. Sift flour, cocoa powder and baking powder into a large bowl.
    3. Add butter, caster sugar, eggs and vanilla extract into the bowl and mix until smooth. Add in the milk. Place into bun cases.
    4. Bake for 30 minutes. Cool on a wire rack.
    5. Cut the cupcake in half and add a dollop of chocolate spread. Put the cupcake back together and serve.
