Pear and amaretto cake

    This pear and amaretto cake is easy but scrumptious! This is one of my mum's recipes, and delicious.

    Ingredients
    Makes: 1 cake

    • 125g butter
    • 50g golden caster sugar
    • 4 tablespoons amaretto liqueur
    • 2 to 3 pears
    • 100g caster sugar
    • 125g self raising flour
    • 2 eggs
    • 2 tablespoons milk

    Method

    1. Preheat oven to 170 C / Gas 3.
    2. Cream 1/3 of the butter with the golden sugar. Mix in 3 tablespoons of the amaretto.
    3. Spread the mix over the bottom of a round 23cm cake tin. Cut the pears in half and remove the cores, then slice. Arrange the pear slices in a fan shape in the pan.
    4. Mix the remaining butter with the caster sugar, flour, eggs and milk. Spread over the pears.
    5. Bake until a tester comes out clean, about 50 minutes. Leave in the tin for 5 to 10 minutes to cool. Remove to a wire rack to finish cooling, and drizzle over the remaining tablespoon of amaretto.
