Pear and amaretto cake

    This pear and amaretto cake is easy but scrumptious! This is one of my Mums recipes, and delicious!

    Makes: 1 cake

    • 125g butter
    • 50g light golden sugar
    • 4 tablespoons amaretto liqueur
    • 2 to 3 pears
    • 100g caster sugar
    • 125g self raising flour
    • 2 eggs
    • 2 tablespoons milk

    1. Preheat oven to 170 C / Gas 3.
    2. Cream 35g of the butter with the golden sugar. Mix in 3 tablespoons of the amaretto.
    3. Spread the mix over the bottom of a round cake tin. Cut the pears in half and remove the cores. Place the pears in a fan shape in the pan.
    4. Mix the remaining butter with the caster sugar, flour, eggs and milk. Spread over the pears.
    5. Bake for 50 minutes. Leave in the tin for 5 to 10 minutes to cool. Remove to a wire rack to finish cooling, and drizzle over the last tablespoon of amaretto.
