Chocolate brownies with red wine glaze

    Chocoholics beware, this is a brownie recipe you may find hard to resist. The merlot's cherry, boysenberry, plum and chocolate flavours complete with a vanilla finish make it a wine you will love taking time to savour. What better excuse is there than Easter to relax and indulge with family and friends?

    • 110g (4 oz) dark chocolate, chopped
    • 110g (4 oz) butter, cut into pieces
    • 4 tablespoons merlot, such as Barefoot Merlot
    • 2 eggs, at room temperature
    • 150g caster sugar
    • 1 teaspoon vanilla extract
    • 60g plain flour
    • 30g unsweetened cocoa powder
    • 1/2 teaspoon coarse sea salt
    • Red wine glaze
    • 55g (2 oz) cooking chocolate
    • 1 tablespoon unsalted butter
    • 2 tablespoons merlot, such as Barefoot Merlot

    1. Preheat the oven to 180 C / Gas 4. Line a 23cm (9 in) square tin with baking parchment or foil.
    2. In a small pot over low heat, melt the butter and chocolate together until smooth. Add the merlot and whisk until fully incorporated and remove the pot from the heat.
    3. Add the eggs to the chocolate mixture one at a time, and whisk to combine after each addition. Add the sugar and vanilla and stir to combine.
    4. Add the flour, cocoa powder and salt and stir until smooth. Transfer mixture to prepared tin.
    5. Bake in the oven for 25 minutes, or until the centre is set and a skewer comes out clean. When the brownies are done, let them cool.
    6. Meanwhile, melt together the cooking chocolate and butter for the glaze. Once melted, whisk in the merlot and set aside.
    7. Once cooled, drizzle the glaze over the brownies and spread it on top using a spatula.
