Moroccan chicken with fruity couscous and spiced yoghurt dip

    I love the fruity couscous, and it complements this chicken dish so well. Slightly sweet, slightly spicy, a favourite with all the family.

    Serves: 4 

    • 2 chicken breast fillets
    • 2 teaspoons Moroccan spice mix
    • 2 teaspoons plain flour
    • oil for frying
    • For the couscous
    • 200ml apple juice
    • 200g couscous
    • 4 dried apricots, chopped
    • 1 handful sultanas
    • 1/2 small red onion, sliced thinly
    • 1 tablespoon lemon juice
    • 1 handful pistachio or almonds, roughly chopped
    • Yogurt dip
    • 100g natural or Greek style yoghurt
    • 1 teaspoon Moroccan spice mix
    • 1 dash honey
    • fresh or dried mint (optional)

    1. Heat the apple juice, then pour over the couscous. Leave to one side to fluff up and heat through.
    2. Flatten the chicken breasts. Mix the flour and 2 teaspoons Moroccan spice mix, and coat the chicken. Heat some oil in a frying pan and fry the chicken until cooked through and crisp on both sides.
    3. While the chicken is cooking, mix the chopped apricots, sultanas, nuts, red onion and lemon juice in a bowl.
    4. Make the yoghurt dip by mixing the ingredients in bowl. Sprinkle with chopped fresh mint if you have some, or a small pinch of dried mint.
    5. Mix the couscous with the fruit mixture. Serve with the chicken and dip on the side.

    Moroccan spice mix

    If you can't get this in your local store, you can make one yourself from your spice cupboard! Just mix a little cumin, cinnamon, cardamon, ginger, turmeric, nutmeg, with salt and pepper.
