Sugar-free peanut butter cookies

    I made these sugar-free cookies with Dayelet Cookies sugar-free sweetener, a sugar substitute that replaces sugar in a 100% of its weight. It substitutes sugar in any recipe on a 'weight to weight' basis, without modifying the rest of the ingredients.

    Serves: 12 

    • 170g peanut butter
    • 150g Dayelet Cookies sugar-free sweetener
    • 30g soya yoghurt
    • 1 egg
    • 150g soft wholemeal flour
    • 1/2 tablespoon baking powder

    1. Beat together the peanut butter, yoghurt and egg. Add Dayelet Cookies sugar-free sweetener and stir well. Mix in the flour and baking powder. Let the mixture rest for 20 minutes.
    2. Roll the dough and cut it into small pieces and place cookies on a greased tray.
    3. Bake at 190 C / Gas 5 for 10 to 15 minutes.


    Carbohydrates: 51.8%. Fat: 16.2%. ProteĆ­n: 11.8%. Kcal./100 g: 365 (51 less calories). Calorie reduction: 12.2%. Glycemic Index: 30.
