About this recipe: A spring soup packed with tasty vegetables. Very easy to cook with minimum fuss, using simple healthy ingredients for the perfect mid-week meal - enjoy!

Serves: 4 

  • 4 large carrots, roughly chopped
  • 1 medium onion, roughly diced
  • 2 cloves garlic, crushed
  • 1L water
  • 2 Bisto® veg stock melts
  • 3 tablespoons chopped fresh coriander

Prep:10min  ›  Cook:25min  ›  Ready in:35min 

  1. Add all the ingredients, except the coriander into a suitable pan.
  2. Bring to the boil and simmer for 20 to 25 minutes or until the vegetables are thoroughly cooked through.
  3. Liquidise using a stick blender or food processor until smooth. Return to the pan and keep hot. Add the coriander and stir.

This soup was delicious and really easy to make! I have a stomach ulcer so I can't have gluten, dairy, tomatoes, fruit, sugar, fat and processed foods. I thought I would never be able to eat anything besides salad and then I found this recipe and not only can I eat it, it tastes amazing as well! Really easy to make and tasty soup added some pepper to the base the second time around. And used Knox veg cubes - 24 Dec 2015
