About this recipe: This is a lovely moist apple and sultana cake, especially nice when served with hot custard. Cream or ice cream would also be good.

Makes: 1 apple cake

  • 4 or 5 cooking apples - peeled, cored and chopped
  • 150g (5 oz) sultanas
  • 2 teaspoons vanilla extract
  • 225g (8 oz) demerara sugar
  • 225g (8 oz) butter or margarine
  • 3 eggs
  • 225g (8 oz) self-raising flour
  • 1 teaspoon preferred spice, such as ground cinnamon or mixed spice
  • demerara sugar, for sprinkling

  1. Peel and chop apples. Place in a non stick saucepan. Add sultanas and a splash of water. Simmer till apples are soft, then stir in vanilla. Remove from heat and set aside.
  2. Cream together the butter and sugar till light and creamy, then beat in one egg at a time. Stir in the flour by hand, along with any spices. Finally, fold in the cooled apple mixture. Tip into a greased square cake tin, about 20cm. Sprinkle the top with demerara sugar.
  3. Place into a preheated 160 C / Gas 3 oven and bake for 50 to 60 minutes, or till a knife inserted in the centre comes out clean. Let cool in tin before slicing.
