Easypeasy lemon pots

    A simple recipe for a most delicious lemony dessert. I serve it in a fancy glass with a shortbread biscuit on the side and it always looks classy.

    Serves: 4 

    • 600ml double cream
    • 140g caster sugar
    • 2 large lemons, zest and juice

    1. Gently heat the cream and sugar in a pan until the sugar has dissolved.
    2. Turn off the heat and leave to cool for a few minutes.
    3. Add the juice and zest of the lemons. Stir well.
    4. Pour into glasses and refrigerate for at least 4 hours(you could always make the day before and leave over night).
    5. Enjoy!
