Creamy pasta surprise

    This is a recipe I made with ingredients from my cupboard and the best thing is you can adapt ingredients or add extras. My grown-up kids and friends loved it and my partner can't get enough of it... Quick and easy.

    Serves: 2 

    • 250g penne pasta
    • butter or margarine for frying
    • 100g sliced button mushrooms
    • 75g diced bacon or lardons
    • 1 to 2 garlic cloves, grated
    • 1 teaspoon chilli flakes, or to taste (optional)
    • 300ml Elmlea®, single cream or double cream
    • 1 to 2 handfuls grated cheese

    1. Cook pasta in salted boiling water until just slightly under cooked. Drain.
    2. Lightly fry bacon and mushrooms in butter, but do not brown. Add grated garlic and chilli flakes if desired.
    3. Once bacon is cooked and mushrooms are soft, add pasta and mix. Pour over your choice of cream. Take off the heat and stir through.
    4. Serve in bowls with grated cheese on top if desired.


    This is a very simple and quick dish and tastes utterly scrummy. Please once you have added the cream do not heat too much as cream will evaporate.
    You can also add cooked chicken to this dish, a great way to use leftovers. Add the chicken just before adding the pasta.
