Best chocolate chip muffins

    These chocolate chip muffins rise well and taste great. Good for snacking between meals or for when you have guests coming around.

    Makes: 18 to 20 muffins

    • 140g plain chocolate
    • 375g self raising flour
    • 1 tablespoon baking powder
    • 55g cocoa powder
    • 85g caster sugar
    • 2 medium eggs
    • 2 teaspoons vanilla extract
    • 6 tablespoons sunflower oil or melted butter
    • 375ml semi-skimmed milk
    • 150g chocolate chips (white, plain or dark)

    1. Pre-heat oven to 200 C / Gas 6 and place 18-20 muffin cases in a muffin tin or deep cupcake tin.
    2. Melt plain chocolate over a pan of simmering water, stir constantly until smooth.
    3. Sift the flour, baking powder and cocoa powder into a bowl and stir in the sugar.
    4. In a separate bowl beat together eggs, vanilla, oil and milk. Stir in the melted chocolate.
    5. Fold the two mixtures together. Then fold in the chocolate chips. Do not over work or beat. Divide between the prepared muffin cases.
    6. Bake for 20 to 25 minutes, or till risen and a skewer inserted in the centre of a muffin comes out clean.
