Sticky ginger parkin

    This is one of my family's favourites! Absolutely delicious. For best results, keep a couple of days before cutting into cake.

    Makes: 1 (2 lb) loaf cake

    • 110g (4 oz) black treacle
    • 85g (3 oz) margarine
    • 1 tablespoon golden syrup
    • 125ml milk
    • 175g (6 oz) self raising flour, sifted
    • 175g (6 oz) medium oatmeal
    • 85g (3 oz) soft brown sugar
    • 1/4 teaspoon bicarbonate of soda
    • To melt in a medium sized saucepan
    • 1/2 teaspoon ground ginger

    1. Preheat the oven to 180 C / Gas 4. Grease and line a 900g (2 lb) loaf tin with baking parchment.
    2. Melt treacle, margarine and syrup together with milk in a medium sized saucepan.
    3. Add dry ingredients. Mix well. Pour mixture into tin.
    4. Bake for 50 to 60 minutes in oven. Test with cake tester; it should come out clean.
