Grandma's traditional lemon cheese

    This is absolutely heavenly. Enjoy this old fashioned lemon cheese spread on toasted muffins or bread. Can also be used in small pastry shells as alternative to jam tarts.

    Serves: 6 

    • 175g (6 oz) sugar
    • 85g (3 oz) butter
    • 2 eggs, beaten well
    • juice of 2 large lemons

    1. Melt butter, and sugar in stone jar set in pan of boiling water on a trivet (a metal stand).
    2. Add lemon juice, then well beaten egg stirring briskly for a few minutes.
    3. Simmer until it is thick enough to spread, about 30 minutes.
