About this recipe: A lovely no-bake cheesecake made with any fruit you wish. Simple and easy to make and rich in flavour.

Makes: 1 large cheesecake

  • 1 1/2 packets digestive biscuits, crushed
  • 200g melted butter
  • 400g soft cheese
  • 300g mascarpone cheese
  • 120g caster sugar
  • 300ml double cream
  • 1 punnet strawberries, hulled

Prep:30min  ›  Extra time:1hr chilling  ›  Ready in:1hr30min 

  1. Combine crushed biscuits with melted butter. Press into the bottom of a springform cake tin or large pie dish lined with parchment (makes it easy to slice and serve). Chill for 30 minutes.
  2. Mix the soft cheese, mascarpone and sugar together till well blended.
  3. Whisk the double cream till thickened. Add to the cheese mixture, then fold in the fruit (reserve some for topping).
  4. Spoon the mixture over the chilled biscuit base and smooth the top with the back of a spoon. Decorate with remaining strawberries. Chill for an hour before serving.


Use any fruit or mixture of fruit. This is a large dessert so you will need a good size dish

Used this today but to make mini cheesecakes - halved everything in the recipe (except biscuits because "1 packet" is not an easy measurement to follow, I just estimated with that) and got 7 ramekin sized cheesecakes, for my Christmas Day dessert (not just mine ...)! The topping is super creamy and tasty, without being sickly like some cheesecake. I'm pretty pleased with my first cheesecake attempt ^_^ - 23 Dec 2014
