Place the sugar and water together in a saucepan on a low heat until the sugar has dissolved. Allow it to cool completely.
Scoop out the seeds of the passion fruit and finely chop the strawberries. Put fruit into a food processor along with the lemon juice and syrup. Pulse for about 20 seconds, then transfer through a sieve over a bowl and rub with a spoon until just only the seeds remain in the sieve.
Churn in an ice cream machine till frozen. If you don't have one, pour the mixture into a freezable container with a lid, and wait for about 3 to 4 hours until it looks icy, take it out whisk the mix up and set back into freezer. Repeat this process 2 to 3 more times until ready.
Keep the passion fruit shells and put them in the freezer until the sorbet is ready; you can use them to serve the sorbet in.
