About this recipe: We are always trying to get the perfect simple Yorkshire pudding recipe. After many weeks of testing new recipes I finally came up with the perfect one. I prefer to make the batter when I'm putting the meat in for our Sunday roast, that way the mix has time to set and get to room temperature before baking. I cook these for my family every weekend and there is always demand for more.

Serves: 8 

  • lard, oil or fat from your roast
  • 2 eggs
  • 110g (4 oz) plain flour
  • milk
  • 1 pinch of salt

  1. Pre-heat your oven to 200 C / Gas 6, your oven needs to be really hot.
  2. Fill each well of your muffin tin with 1 teaspoon of lard, vegetable oil or the fat from your meat that you have roasted. Place the tin in oven to get hot whilst preparing your batter.
  3. Break the 2 eggs into a cup. If the eggs come to about halfway in the cup, then use half a cup of milk. There should be the same amount of milk as there is eggs.
  4. Using a large bowl, sift the flour making a well in the middle. To the well, add your eggs and a pinch of salt.
  5. Mixing with a fork or whisk, gradually add your milk until you have a smooth, lump-free and thick batter. Leave mixture to stand until the fat in the muffin tin is boiling hot.
  6. Once fat is hot, spoon your mixture into the tin, about 1 quarter of the way. Or a bit more if you would like monster/chef hat Yorkshires, but fill no more than halfway.
  7. Place the tin back in the hot oven for around 25 minutes, or until they are raised and golden brown. Keeping the temperature high throughout. Do not open the oven before 25 minutes!
  8. Take out your Yorkshires, they should come out of the tin with ease if you have used lard, fat or veg oil.
  9. Enjoy :)
