Scrummy chocolate cupcakes

    Gorgeous soft sponge cupcake with a creamy chocolate icing that looks good with your favourite cake decorations!

    Ingredients
    Serves: 12 

    • 275g butter or margarine, softened
    • 175g caster sugar
    • 2 eggs
    • 175g self raising flour
    • 60g cocoa powder
    • 200g icing sugar
    • cake decorations, such as sugar strands

    Method
    Prep:15min  ›  Cook:15min  ›  Extra time:10min cooling  ›  Ready in:40min 

    1. Pre-heat oven to 180 C / Gas 4 and place cake cases in a cake tin.
    2. Beat 175g of the butter and sugar until light and fluffy. Lightly beat the eggs then gradually add them to the mixture.
    3. Sift in 20g of the cocoa powder and the flour then fold it into the butter mixture. Spoon the mixture evenly into the cases.
    4. Bake for 15 to 20 minutes or until golden brown.
    5. While the cupcakes are baking, whisk together the remaining butter, icing sugar and cocoa powder until combined.
    6. Check the cupcakes and remove to cool when they are ready. Leave to completely cool before decorating.
    7. Spread the icing on the cakes and sprinkle with your choice of decorations.
