    This Thai spicy chicken salad is one of my favourite ever Thai dishes that just keeps me going back every year. It is so quick so easy and it is great for BBQs, family dinners or parties. I hope you enjoy my recipe.

    Serves: 6 

    • 500g minced chicken
    • 4 red Thai chillies, finely chopped
    • 1 stem lemongrass, bruised
    • 2 1/2 tablespoons fish sauce
    • 2 cloves garlic, finely chopped
    • 2 juice of limes
    • 1 tablespoon oil
    • 1 red onion, finely chopped
    • 50g crushed peanuts
    • 15 mint leaves, roughly chopped
    • 2 1/2 tablespoons sweet chilli sauce
    • 10g coriander, roughly chopped
    • To serve
    • 1 iceberg lettuce
    • 300g jasmine rice, cooked

    1. Combine chicken mince, chillies, lemongrass, fish sauce and garlic.
    2. Heat the oil in a frying pan. Cook the mince mixture over medium high heat until chicken is cooked and little moisture remains in the pan. Remove from heat and cool.
    3. Once chicken is cooled, remove the lemongrass stalk and then combine all ingredients in a bowl, apart from the lettuce and the rice.
    4. Serve the chicken mixture with leaves of lettuce to use as a 'bowl' with a spoonful of rice.

    Superb! Flavours were so authentic. Couldn't get chicken mince, so just finely chopped some chicken breasts. On my favourites list!  -  26 Jul 2013
