About this recipe: Diced pears covered with vanilla custard and biscuit crumbs, decorated with vanilla sugar and mint leaves. This is perfect if you love sweet stuff!

Serves: 2 

  • 1 pear, peeled and diced
  • 3 small biscuits, crushed
  • vanilla sugar to taste
  • 200g vanilla custard
  • 4 mint leaves

  1. Divide diced pears between two serving dishes. Combine biscuit crumbs with vanilla sugar to taste.
  2. Top each with 40g custard, then with biscuit crumbs. Repeat layers, ending with biscuit crumbs, then dollop each dish with a smaller amount of custard. Top with mint leaves and serve.


You could also use tinned pears for this easy recipe. The biscuits you use are up to you, but digestives would work a treat.
