About this recipe: A chicken filo pie created from two different recipes and put together to create a great meal and kids love it. I've had good reviews from family members especially the first time I made this. I had family visiting from Wales and they couldn't get enough!!! My mother in law loves it. Serve with green beans and roast potatoes.

Serves: 4 

  • 4 chicken breast fillets, diced
  • 3 large leeks, sliced
  • olive oil, as needed
  • salt and ground black pepper, to taste
  • 1 packet cheese sauce
  • 5 sheets filo pastry
  • melted butter or margarine

  1. Pan fry the chicken and leeks in a drizzle of olive oil. Season with salt and pepper. Cook for 10 to 15 minutes, stirring occasionally, till the chicken is cooked through and the leeks are soft.
  2. Prepare the cheese sauce according to packet instructions (or use your favourite recipe, or ready-made cheese sauce in a tub).
  3. Add the cheese sauce to the chicken mixture and stir well. Transfer to a baking dish and let cool slightly before adding the pastry.
  4. Add 1 sheet of filo pastry on top of the chicken mixture and brush with melted butter. Repeat until all 5 sheets are used, finishing with butter.
  5. Bake in a preheated 180 C / Gas 4 oven for 20 to 25 minutes or until the pastry is crisp and golden brown.


Instead of cheese sauce, you could use a white sauce and add grated cheese to your liking. You could also experiment with the addition of chopped fresh herbs, such as parsley, tarragon, basil or oregano.

I found this recipe when I found I had hardly anything in the cuboard. Used normal onion instead of leeks. Its was so yummy and the children loved it. Its a winner! - 13 Jan 2014
