Easy no bake lemon cheesecake

About this recipe: I love lemons and cheesecake. This was passed onto me by my son's girlfriend's mum. So easy and tasty.

Serves: 6 

  • 15 to 20 digestive biscuits, crushed
  • 50g melted butter
  • 1 sachet lemon jelly
  • 300g cream cheese
  • 250g lemon yoghurt (I prefer Greek)

Prep:15min  ›  Extra time:1hr chilling  ›  Ready in:1hr15min 

  1. Combine crushed biscuits and melted butter. Place into a cake tin and press down. Put into the fridge to chill.
  2. Melt jelly in a bowl in the microwave for 15 seconds.
  3. Mix cream cheese and yoghurt into melted jelly till all mixed in and smooth. I used an electric mixer on low.
  4. Pour over biscuit base, then chill for an hour or two. Simple!

Wow, this is so easy, quick & delicious. I used low fat Philadelphia & yogurt so it's healthy too. 20 biscuits was 3/4 pack. It is quite rich so will serve 8 easily. Maybe I'll experiment next time with ginger biscuits. - 02 Dec 2013
