Alyssa's chicken and coconut curry

    This is a great recipe for children that have never eaten a curry before. It's simple, not spicy, but very, very tasty.

    Serves: 1 

    • oil for frying
    • 1/2 large onion, diced
    • 2 cloves garlic, crushed
    • 1/2 teaspoon ground coriander
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon turmeric
    • 1 teaspoon curry powder
    • 1 chicken breast fillet, diced
    • 30ml tomato ketchup
    • 125ml chicken stock
    • 125ml milk
    • 2 handfuls desiccated coconut
    • 1 banana, sliced

    1. Heat a drizzle of oil in a large heavy based pan. Stir in onions and cook until soft.
    2. Mix in garlic and all spices. Stir in the chicken and cook for about 5 minutes, until sealed.
    3. Stir in the ketchup and stock. Cover and simmer for about 15 minutes, stirring occasionally.
    4. Stir in the milk and coconut, cover and simmer for another 10 minutes, stirring occasionally. Add banana and simmer for another 5 minutes. Serve with rice and naan bread.
