In a breakfast sized bowl put in enough breadcrumbs to cover the bottom, about 2cm. Add the dried sage. Put enough in so that the breadcrumbs and sage are of equal amounts, or to taste.
Heat butter in a large frying pan. Dip each pork steak in the egg, then in the breadcrumb mixture. Place in the hot pan and cook till nice and golden on both sides, and till the steaks are cooked through. If you run out of butter just add more. You can use the juice of what's left after frying to pour on to the steak if you wish.
Once the steaks are golden, serve with either salad and baked potato or maybe some good old chips.
I normally serve one pork steak per person. Hope you enjoy.
