Goat's cheese ciabatta

    This toasted ciabatta topped with pesto, tomato and goat's cheese is delicious for a quick lunch or serve with a nice salad as a main meal.

    Serves: 2 

    • 1 ciabatta
    • 2 tablespoons green pesto
    • 2 teaspoons pine nuts (optional)
    • 2 beef tomatoes or 4 small tomatoes, sliced
    • 1 (5cm) block goat's cheese, sliced

    1. Preheat oven to 220 C / Gas 7.
    2. Cut ciabatta in half lengthways and place the halves on baking tray.
    3. Spread the pesto on each ciabatta half and sprinkle a few pine nuts on top if using, then top with sliced tomatoes. Finally, top with the goat's cheese (you should get about 3 slices of goat's cheese on each half of the ciabatta).
    4. Put in the oven and cook for about 20 minutes, or until golden and the cheese is melted and bubbly. Serve!


    I sometimes ask the cheese counter to slice the goat's cheese for me as it can be tricky to cut at home. This is also delicious using roasted veg as a topping, ie peppers, instead of the tomatoes
