Cut ciabatta in half lengthways and place the halves on baking tray.
Spread the pesto on each ciabatta half and sprinkle a few pine nuts on top if using, then top with sliced tomatoes. Finally, top with the goat's cheese (you should get about 3 slices of goat's cheese on each half of the ciabatta).
Put in the oven and cook for about 20 minutes, or until golden and the cheese is melted and bubbly. Serve!
I sometimes ask the cheese counter to slice the goat's cheese for me as it can be tricky to cut at home. This is also delicious using roasted veg as a topping, ie peppers, instead of the tomatoes
